For those of you who land at this site looking for a coconut milk substitute - here in Australia (not sure if it is available elsewhere) we can buy CARNATION Light & Creamy Coconut Flavoured Evaporated Milk (by Nestle) From the site - It is 98.5% fat free and has 94% less saturated fat than traditional coconut milk.
